Recipe - DR-2658 HOKUREN DAINAGON AZUKI (DRIED RED BEAN)
 
HOW TO BOIL RED BEAN

1. LIGHTLY RINSE THE BEANS, PLACE THEM IN A SAUCEPAN, ADD ABOUT THREE TIMES AS MUCH WATER OR BOILING WATER AS THE BEANS AND IMMEDIATELY START BOILING.

2. WHEN THE WATER COMES TO A BOIL OVER HIGH HEAT, ADD WATER AND BRING BACK TO A BOIL, THEN DRAIN THE BEANS IN A COLANDER AND DISCARD THE COOKING WATER TO SKIM OFF FOAM.

3. ADD ABOUT THREE TIMES AS MUCH WATER AS THE BEANS AGAIN AND BRING TO A BOIL OVER HIGH HEAT, THEN REDUCE THE HEAT TO MEDIUM-LOW AND SIMMER FOR 60-90 MINUTES UNTIL THE CORE OF THE BEANS IS TENDER.

4. SKIM OFF FOAM THAT COMES OUT DURING THE SIMMERING PROCESS AND ADD MORE WATER TO KEEP THE BEANS FROM RISING ABOVE THE SURFACE OF THE COOKING LIQUID.

5. WHEN THE CORE IS TENDER, ADD SUGAR (250-300 G) AND SALT TO TASTE AND CONTINUE TO COOK OVER LOW HEAT FOR SIMMER FOR ABOUT 30 MINUTES.

6. ONCE COOKED, TURN OFF THE HEAT AND ALLOW THE FLAVOURS TO INFUSE FOR 30 MINUTES.
