HOW TO BOIL SOY BEAN

1. LIGHTLY RINSE THE BEANS, PLACE THEM IN A POT AND SOAK THEM IN WATER THREE TIMES THE SIZE OF THE BEANS FOR 4-5 HOURS, OR IN LUKEWARM WATER FOR 4 HOURS.

2. TRANSFER THE WHOLE WATER TO THE SAUCEPAN AND KEEP IT OVER HIGH HEAT, AND WHEN IT BOILS, CAREFULLY REMOVE THE PITS.

3. THEN REDUCE THE HEAT TO MEDIUM TO LOW AND SIMMER FOR 60-90 MINUTES UNTIL THE CORE OF THE BEANS ARE TENDER.

4. SKIM OFF FOAM THAT COMES OUT DURING THE SIMMERING PROCESS AND ADD MORE WATER TO KEEP THE BEANS FROM RISING ABOVE THE SURFACE OF THE COOKING LIQUID.

5. WHEN THE CORE IS TENDER AND COOKED, DISCARD THE COOKING LIQUID FROM THE PAN AND SEASON WITH THE SEASONING OF YOUR CHOICE.
