HOW TO ENJOY
[INGREDIENTS]
3 PIECES OF FRIED TOFU (6 SERVINGS), 200CC WATER,
(A) 2 LARGE SERVINGS OF SAKE, SUGAR, MIRIN, AND SOY SAUCE
-SUSHI RICE
2 CUPS OF RICE,
(B) 100CC VINEGAR, 50G SUGAR, 1/2 TEASPOON SALT

1. ROLL THE FRIED TOFU OVER THE SURFACE WITH CHOPSTICKS (TO MAKE IT EASIER TO OPEN INTO A BAG). CUT IT IN HALF AND MAKE A BAG.
2. BOIL WATER IN A POT TO REMOVE THE OIL AND BOIL FOR ABOUT 3 MINUTES.WASH THOROUGHLY WITH WATER TO REMOVE THE OIL AND DRAIN WELL.
3. COMBINE ALL THE INGREDIENTS (A) FOR THE BROTH AND ADD THE FRIED TOFU. COVER WITH A DROP LID AND SIMMER OVER LOW HEAT UNTIL THE BROTH IS GONE.
4. WASH THE RICE AND COOK IT FOR SUSHI RICE. MIX WITH THE VINEGAR MIXTURE (B). ONCE COOKED, TRANSFER TO A SUSHI TUB, POUR SUSHI VINEGAR OVER IT, MIX WELL, AND COOL.
5. ONCE THE FRIED TOFU HAS COOLED DOWN, DRAIN OFF THE EXCESS LIQUID, ADD AN APPROPRIATE AMOUNT OF RICE FROM STEP 4, WRAP IT UP, AND IT'S DONE!
